Actually, the default filesystem that Mac OS X installs is case-insensitive, it’s not just for symlinks. Try cd ~/dEskTOP or something
There is a more UNIX-y version of HFS that is case-sensitive, but I don’t recommend using that unless you don’t mind a few apps not working.

This has surprised me out a few times, never in a bad way though. On a regular *nix (Debian, Ubuntu etc) I’m just accustomed to paths not being resolved when I get the case wrong in a script
I’m happy with the way the Mac is though so I’ll leave the file system type as is.
